The traditional festival of Thracian banitsa is organised annually by Elhovo Municipality and Razvitie – 1893 Community Centre in Elhovo under the motto Banitsa Twisted – Twice Folded.
The event is a competition open to everyone, with no age restrictions. Each settlement in Elhovo Municipality may enter one to three products, with the requirement that they must be banitsa. Participants from the town may also enter up to three banitsa. Participants are free to choose the type of banitsa they wish to present, provided it is traditional for the settlement they represent. Both sweet and savoury banitsa are accepted, made with ready-made or hand-rolled pastry sheets, with or without filling.
Those wishing to participate must submit an application at the community centre or by email to chit_elhovo@abv.bg, accompanied by a detailed description of the recipes.
